Instructions
Step 1
Prepare foil handles the slow cooker (see below) or use a slow cooker trivet. Place foil handles/trivet in the slow cooker.
Step 2
Place 1 tortilla on the bottom of the slow cooker. Spread a small amount of refried beans, sauce, chicken, and cheese. Continue layering using remaining ingredients, ending with cheese.
Step 3
Cover; cook on LOW 6-8 hours or HIGH 3-4 hours. Pull out by foil handles/trivet handles.
Step 4
Garnish with fresh cilantro and slice of bell pepper if desired.
Step 5
FOIL HANDLES:
Tear off three 8x12 inch strips of heavy foil or use regular foil folded to double the thickness. Crisscross the foil strips in a spoke-like design and place in slow cooker to make lifting the tortilla stack easier.
