Step 1
In a food processor, mix your boiled potatoes with milk and saffron, set aside.
Step 2
In a pan over medium low heat, sizzle some finely chopped onions with oil for a couple of minutes then add your skinless sausages in. Break your sausages with a spoon and cook them for 5/8 minutes or until nice and golden.
Step 3
Boil your spaghetti, drain and add them to the pan. Add your potato cream, some pasta water and stir well to combine all the flavours together. Turn the heat off, add the grated cheese, some pepper and serve. Buon appetito!
