Instructions
Step 1
To a pan add the ground chicken and cook all the way through.
Step 2
Stir in the bell pepper and onion and cook for 5 minutes until softened.
Step 3
Stir in the fajita seasoning and 1 cup of chicken broth.
Step 4
Add the rice and the other cup of chicken broth and stir until combined. Switch heat to low, cover, and cook for 7 minutes.
Step 5
Give the rice one final stir then top evenly with cheese, cover, and cook for another few minutes until the cheese is melted.
