Step 1
1. Wash and peel the vegetables.
Step 2
2. Dice all the vegetables into bite-size pieces.
Step 3
3. Add all ingredients except the rice to a soup pan over medium high heat and bring to a low boil, stirring occasionally, for about 30 minutes until the vegetables are beginning to soften.
Step 4
4. Lower the heat to medium low, stir in the rice and cook for 10 to 15 minutes, stirring regularly, until the rice is soft and the vegetables are fork tender.
