In a small bowl, combine mayonnaise, and half the garlic powder (you'll use the rest later). Season with salt and pepper

Heat a large drizzle of oil in a large, preferably nonstick, pan over medium- high heat. Cook cheesesteak. Add onion, green pepper. Stir in remaining garlic powder, 4 tsp Italian Seasoning and salt. Cook, stirring occasionally and breaking up meat into pieces, until veggies are softened and meat is cooked . 5-7 minutes.

During the last minute of cooking sprinkle Parmesan and Monterey jack over meat and veggies. Cover until cheese melts.
