Instructions

Step 1
Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Add eggs and vanilla, mixing well.

In another bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add to the creamed mixture, mixing just until incorporated. Stir in the oats.

Drop tablespoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Bake for 10-12 minutes or until the edges are golden brown. Allow to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Prepare the Cream Filling: In a medium bowl, beat the butter until smooth. Add powdered sugar, vanilla, and cream; beat until light and fluffy.

If the filling is too thick, add a bit more cream; if too thin, add more powdered sugar.

Assemble the Cream Pies: Pair the cookies up by size. Spread or pipe a generous amount of filling on the flat side of one cookie of each pair. Top with the second cookie, pressing down gently to spread the filling to the edges.
