Inspired by a popular drink in Mexico. A large cucumber is about 600g, and 100ml lime juice is 5-6 limes.

Instructions

Step 1
Put the sugar and water in a small pan. Bring to a boil over a medium heat.
Step 2
Reduce the heat and simmer for about 3 minutes, stirring occasionally, until the sugar has dissolved.
Step 3
Remove from the heat and set aside to cool to room temperature.
Step 4
Peel the cucumber, slice in half lengthways, and use a teaspoon to scoop out and discard the seeds. Cut into chunks and put in a blender or food processor.
Step 5
Pick the mint leaves from their stems and add to the cucumber chunks. Whizz until smooth.
Step 6
Strain the mixture through a sieve, using the back of a ladle to press down the pulp and extract as much juice as possible.
Step 7
Pour the strained cucumber juice, sugar syrup and lime juice into a large jug and stir well. Add plenty of crushed ice, and the extra mint leaves to decorate.
Step 8
If serving with tequila, add a 25ml measure to each glass with ice and top up with the agua fresca.
