Ingredients

2 Tbspwhite balsamic vinegar
2 Tbspdark Balsamic vinegar
½ tspsea salt
¼ tspblack pepper
⅔ cupGrape tomatoes
halved
⅔ cupCucumbers
chopped
2 TbspRed onions
diced or sliced
4 ozBoneless skinless chicken breast
grilled or baked in the oven, cubed
¼ cupFeta cheese crumbled
optional, skip for dairy-free, paleo or whole30
1 cupRomaine lettuce
chopped, packed to measure
0.5garlic clove
Instructions
Step 1
Vigorously whisk together the dark and white balsamic vinegars, garlic sea salt, and black pepper, until it forms a balsamic vinaigrette dressing (emulsifies). You can also shake in a small container instead. Pour into the bottom of a large glass jar.
Step 2
Layer the remaining ingredients in the order listed - tomatoes, cucumbers, red onions, chicken, fat free feta cheese (if using, leave out cheese if before 3rd week on program), and romaine lettuce. Do not mix together.
Step 3
Cover the jar with a lid and refrigerate until ready to eat, up to 3-5 days.
Step 4
When ready to eat, shake the jar vigorously to mix everything together. Pour into a bowl to eat.
Step 5
You can double or triple the recipe etc to make multiple jars of the salad to meal prep several days
