Trim off any excess fat from chicken and discard. Rub Cajun thoroughly on the chicken and combine eggs, buttermilk, buffalo hot sauce and let soak overnight. If you can’t wait overnight. 3 hours is great. This helps tenderize the chicken. Use a food processor to crush the Cheeto’s, if you don’t have one, wear gloves and use your hands. For frying, preheat oil to 375F. Have a resting rack ready for draining excess oil. Combine all dry ingredients together in a large bowl and mix well. Start coating chicken in corn starch dredge, gently shake off any excess dredge and place in deep fryer. DO NOT crowd deep fryer or else your chicken won’t come out crispy. Cook until golden and crispy! Check for doneness. If internal temperature reads under 165F, simply finish cooking in oven at 350F until fully cooked. Pat dry chicken with paper towel for any excess oil.
