Ingredients
4 servings
1 Tbspoil
750gchuck steak
or gravy beef cubed
500mlbeef stock
4Pickling Onions
Small, whole and peeled
4carrots
sliced
4potatoes
medium, quartered
1can of butter beans
1 Tbsptomato paste
worcestershire sauce
salt
to taste
pepper
to taste
1 cupSR flour
dumplings
1 tblspbutter
cold, dumplings
milk
enough to combine into a scone like dough, dumplings
Instructions
Step 1
Heat oil in cooker with high sauté setting
Step 2
Coat beef with flour a brown all over in cooker
Step 3
When browned turn off cooker add all the vegetables except the butter beans if using pour over the stock and season to taste and stir
Step 4
Put lid on your cooker seal and pressure cook on high for 20min
Step 5
DUMPLINGS: Cut butter into small pieces and rub through sifted flour until crumbly. Add milk and form dough. Cover and put in fridge for 30 mins. Pull off pieces of dough and put into stew.
Step 6
When the stew has cooked carefully release pressure and remove lid. Stir in the butter beans, add the dumplings resting on top of the stew place the lid back on do not seal the cooker set sauté on high for 10min checking them a few times. The stew should have thickened OK if not add a Tbsp. of flour to cold water a mix into the stew after removing the dumplings
