Step 1
Wash the chicken in water and drain it well. Use chicken wings. Remove the moisture with a kitchen towel once more.

Poke the boneless parts with a fork about twice. This allows the seasoning better and makes it tastier.

Place the chicken in a bowl and add about 3 pinches of salt and 2 pinches of pepper. Mix well. Let it rest for about 10 minutes.

Making the sauce: In a bowl, put 2 tablespoons of soy sauce, 2 tablespoons of cooking wine, 1 tablespoon of vinegar, 1 tablespoon of water, 1 tablespoon of sugar, 3 tablespoons of honey or corn syrup, half a tablespoon of minced garlic, and just a bit of juice from the minced ginger. Put some pepper.

After 10 minutes, Put the chicken into a plastic bag or Ziploc. Add 5 tablespoons of potato starch to the bag. Tie the end of the bag well and shake it to evenly coat the chicken with the potato starch. Now, let's fry the chicken.
