Instructions
Step 1
Boil pasta per box instructions. Reserve 1 cup pasta water
Step 2
Saute raw, chopped chicken in olive oil until it's no longer pink.
Step 3
Add onion. Saute until translucent.
Add spinach.
Step 4
Make an open spot in the pan. Add more olive oil. Put tomatoes into that area and Sprinkle with kosher salt. Saute until they blister.
Step 5
Add garlic.
Step 6
Add italian seasoning.
Step 7
Add pasta and reserved water. Saute until it thickens slightly.
Step 8
Sprinkle with feta or another cheese if desired. Or enjoy without.
