Ingredients

2chicken breast
cooked, cubed
12 ouncespasta
1 pintgrape tomatoes
sliced in half
0.5red onion
diced
1cucumber
diced
12 ounceKalamata olives
reserve 2 tbsp brine for the dressing, pitted and halved
1red bell pepper
diced
3.5 ouncefeta cheese
container
2cloves garlic
minced
½ cupolive oil
2 Tbspolive brine
2 Tbspwhite wine vinegar
or red
1 Tbsphoney
2 tspdijon mustard
1 Tbspfresh parsley
1 tspdried dill
1 tspdried oregano
½ tspsalt
¼ tspblack pepper
Instructions
Step 1
Bring a large pot of salted water to a boil. Cook pasta according to package directions. Drain, rinse under cold water and pour into a large mixing bowl.
Step 2
Dice the cooked chicken, red pepper, onion, and cucumber. Slice the olives in half. Add all the vegetables in to the mixing bowl with the pasta.
Step 3
Prepare the dressing. In a bowl whisk together the seasonings, olive oil, olive brine, vinegar, honey, and mustard. Pour over the salad and mix well.
Step 4
Serve immediately or refrigerate until ready to eat.
