Homemade McGriddles

Instructions

Step 1
1. Preheat the oven to 375° F.

2. Place the turkey bacon and hash browns in a tray lined with parchment paper.

3. Eggs- In a large bowl crack in 8 eggs, add in half and half, salt, pepper and whisk. Pour into a 9x9 creased baking dish.

4. Place the trays with the bacon/ hash browns and eggs in the oven and bake for 20-25 minutes or until the eggs are set and the bacon and hash browns are golden and crispy. (You might have to take the eggs out before the bacon and hash browns are done). While they are in the oven start on the pancakes.

5. Pancakes- in a large bowl whisk together pancake mix, milk and maple syrup. Whisk until the batter is smooth.

6. Put a nonstick skillet on medium heat, spray with a little bit of avocado cooking spray. Ladle about 1/3 cup of the batter onto the skillet, to make a pancake. Cook, until bubbles break the surface of the pancakes, and the underside is golden brown, about 2 minutes. Flip with a spatula and cook about 1 minute more on the second side. Repeat until all the batter is done.
Step 7
7. Once the eggs come out of the oven immediately place the cheese slices on top. The heat from the eggs will help melt the cheese.
Step 8
8. Assemble the McGriddles- first pancake followed by egg, hash brown, bacon and another pancake.
Step 9
9. Drizzle a little more maple syrup on top if you would like and enjoy!
