This is my go to sandwich when I want something filling and reasonably healthy but don’t want to cook a full meal . It’s eggy the brioche bun is so perfect with the savory ham and cheese . You’ve got to try this

Step 1
Beat the eggs with salt and pepper then add to a pan with the spring onion sprinkled in. Add the bun and dip it top side then flip it and the same with the other bottom half then cook on medium heat until the egg is done

Step 2
Flip the bun around carefully then fold in the egg flaps on the bun and add the cheese ham sliced tomato and avocado then season to taste with salt and pepper and put the bun on top. Let the cheese melt slightly then serve .
