Instructions
Step 1
Slice the eggplants in half and score them diagonally with a knife. Add some olive oil and salt and place in the oven at 200°C for 15 minutes (until browned on top).
Step 2
Chop the onion, green pepper and garlic very finely. Place in a pot on medium heat with olive oil and cook for 5 minutes. Take the eggplant out of the oven and chop as finely as possible. Add to the onion-pepper together with the tomato paste and water and keep cooking for 5 more minutes
