Instructions
Step 1
Spray a medium non-stick saucepan with low-calorie cooking spray and put it over a medium-high heat. Add the turkey and cook for 9-10 minutes or until browned, breaking it up as it cooks. Drain off any fat.
Step 2
Tip in the peppers and cook for another 10 minutes, then stir through the fajita seasoning and cook for 2 more minutes.
Step 3
Scatter over the rice and pour in the stock, then season lightly and bring to the boil. Stir everything together, cover and reduce the heat to a gentle simmer. Cook for 15-20 minutes or until all the stock has been absorbed and the rice is tender.
Step 4
Check the seasoning and serve.
