Instructions

Open rice noodle package, grab the amount of rice noodles you want to cook. Place rice noodles on a plate and put in microwave for a couple of minutes to heat up. To make sauce, mix light soy sauce, dark soy sauce, oyster sauce and sugar in a small bowl, set aside.

Clean and slice beef tenderloin ( or you may use beef rib meat slices) into medium size or ¼ inch slices. Transfer to a bowl, marinate with light soy sauce, dark soy sauce, oyster sauce, cooking wine, baking soda, corn starch, sugar, mix well and coat with cooking oil and sesame oil, set aside for several minutes.

Place marinated sliced beef tenderloin in the skillet to cook on medium high heat for a minute until meat color changes and it remains a bit red in the center of beef. Immediately transfer to a plate, set aside (you may strain the excess oil if needed).

Gently stir rice noodles with a tong as they can be extremely easy to break apart. Cover skillet with lid and simmer on low heat. It will take two minutes or so to loosen up rice noodles and get them nicely charred.

Once rice noodles turn golden brown, sprinkle a bit of the sauce, gently stir in the noodles. Further add the remaining sauce until noodles are nicely coated with the brown sauce. Add sliced chives, mung bean sprouts to mix, cook for under a minute.

Finally add precooked beef back in as well as sliced scallion. Mix everything for 1 minute and turn off the heat, garnish with black pepper ( you may finish with a tiny bit of sesame oil to drizzle). Serve immediately.
