Beef & Mushrooms w/ Bleu Cheese Alfredo

Instructions

Step 1
CCP--Wash & sanitize hands & prep area. Wear gloves & discard per Facility HACCP guidelines.
Step 2
CCP--Sanitize sink & use sanitized cutting board to prep vegetables.
Step 3
TO PREPARE BEEF:
Step 4
1. Place beef cutlets in greased steamtable pans; sprinkle with salt and pepper. Bake cutlets at 350*F for approximateley 20 - 25 minutes or until internal temperature reaches 155*F degrees F.

2. While beef is cooking: Saute undrained mushrooms and garlic. Add water and beef base; stir frequently. Allow sauce to reduce.
Step 6
3. Add margarine to sauce. Pour over beef cutlets. Cover beef and continue cooking another 10 minutes.
Step 7
CCP: Maintain 135*F or above.
Step 8
TO PREPARE BLUE CHEESE ALFREDO:
Step 9
1. Heat premade Alfredo sauce according to package directions. Add 1/2 of bleu cheese, continue to heat on low, stirring constantly to allow cheese to partially melt.
Step 10
2. Prepare pasta according to package directions and drain.
Step 11
3. Add cheese sauce and remaining blue cheese to the cooked pasta and toss to mix.
Step 12
CCP: Maintain 135*F or above.
Step 13
To Serve: Portion 3 oz beef with mushroom gravy and serve on the side a 4 oz spoodle of pasta mixed with the blue cheese alfredo sauce.
