Step 1
Add cream to a blender and turn on to medium speed for about 3 minutes . It should be clumpy at this stage then turn it on to high speed for another 3 minutes until the buttermilk separates from the butter

Strain the buttermilk off keep this for pancakes or baking

Put the butter back in the blender and wash a few times with very cold water .
Shake the blender jug around then strain off the cloudy watery buttermilk ( I don’t recommend keeping this as it contains too much water )

Step 4
When the water is not as cloudy add a little fresh cold water then put in the blender on a very low speed and pulse a few times for the butter to come together . Strain off and repeat 2 more times . Now add salt or seasonings and shape your butter . Keep in a sealed container in the fridge for up to 10 days
