Ingredients
4 servings
1 cuppanko
or traditional bread crumbs
½ cupgrated parmesan cheese
1 tspgarlic powder
½ tspcayenne pepper
1 Tbspitalian herbs
1 tspsalt
2eggs
beaten
4boneless skinless chicken breasts
cooking oil spray
2 cupschicken broth
1chicken bouillon cube
1 tsponion powder
¼ tspdried thyme
¼ tspdried sage
¼ cupwater
cold
3 Tbspcorn starch
Instructions
Step 1
1. Preheat oven to 375 degrees.
Step 2
2. Beat eggs and pour into a large bowl or dish big enough to dip the chicken.
Step 3
3. In a separate large bowl or dish, combine panko, parm, garlic powder, cayenne and salt.
Step 4
4. Dip each chicken breast in the eggs, then transfer to the panko mixture, gently pressing it into the panko mix to make sure the chicken is coated on all sides.
Step 5
5. Spray sheet pan with cooking spray and bake chicken for 30-40 minutes, turning chicken over half way.
Step 6
6. To make the gravy, combine remaining ingredients except water and corn starch in a medium saucepan. Bring to a boil.
Step 7
7. In a separate small bowl, combine water and corn starch and mix until it's no longer lumpy. Pour corn starch into saucepan and stir.
Step 8
8. Reduce the heat to simmer and stir to make sure the bottom doesn't burn.
Step 9
Tip: If it's too thick, add more stock. If it's too thin, add more corn starch.
