0.75Orange pepper
or Red, cut to 1 in chunks
1White Onion
Med, or yellow, chopped into 1/8 wedges

Instructions
◇ With/Out Meat
Step 1
○ If using a ground meat or meat substitute: brown/cook as usual, adding salt, pepper, and a bit of chilli powder or spices & seasonings you like. ○ Once cooked remove from pot and set aside for now.
◇ Cooking the Veggies
Step 2
Add chopped onion, celery, minced garlic, carrots, the aromatics and veggies that take longer to soften into pan preheated at med - med-low.
Step 3
Add tomato paste and partly drain diced tomatoes and add to the vegetable pot. Stir, scraping the bottom of the pan for any stuck bits.
Step 4
Add the meat/substitute back into the pot. Add remaining seasonings and spices. Stir and begin to simmer.
Step 5
Simmer on low, covered. 10 - 15 min incorporates flavors into the meat and tomato sauce.
☆ If making pasta, begin cooking the noodles just a couple minutes before the next step ☆
Step 6
Add the rest of the veggies to the pot, and stir occasionally. If too thick add water, too thin add a cornstarch slurry to thicken. Cook until veggies are desired firmness.
