Instructions

Step 1
Preheat your oven to 375°F (190°C). Grease a baking dish with butter or cooking spray. Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 5-6 minutes, or until just tender. Drain the cauliflower and set aside. In the same pot, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Reduce the heat to low and add the heavy cream, cream cheese, Dijon mustard, and paprika to the pot. Stir until the cream cheese is melted and the sauce is smooth and creamy. Gradually add the shredded cheddar cheese to the sauce, stirring constantly, until the cheese is melted and the sauce is thickened. Season the cheese sauce with salt and pepper to taste. Add the cooked cauliflower florets to the cheese sauce in the pot and gently toss until the cauliflower is evenly coated. Transfer the cauliflower and cheese mixture to the greased baking dish, spreading it out evenly. If desired, sprinkle crispy bacon bits, chopped chives, or breadcrumbs over the top of the cauliflower "mac & cheese" for added flavor and texture. Bake in the preheated oven for 20-25 minutes, or until bubbly and golden brown on top. Remove from the oven and let the cauliflower "mac & cheese" cool for a few minutes before serving. Serve hot as a delicious and satisfying low-carb alternative to traditional macaroni and cheese
