Instructions
Step 1
Fry onions in oil ( add about 300 ml of oil to the pan is oh will drain it off later ) until golden then remove from the pan and add to a large bowl

Quarter then thinly slice the potatoes and add to the pan with the oil and fry on medium heat for a few minutes until golden then remove from the pan and add to the onions and drain most of the oil off

Step 3
Add bacon and any seasonings you like then add the beaten eggs and put in the pan on medium high heat . Fry 3 minutes then lower the heat and cover with a lid . When the top isn’t shiny anymore flip it and fry a few minutes on the bottom side ! Serve and enjoy
