Instructions
Step 1
Heat a Dutch oven and add the olive oil and onions. Cook until the onions soften and are translucent. Add the garlic and cook another minute.
Step 2
Season the chicken with salt and pepper and add to the Dutch oven. Cook until no longer pink.
Step 3
Add the chicken stock and bring to a low boil.
Step 4
Add the potatoes, white beans, and green enchilada sauce. Simmer until the potatoes are tender.
Step 5
Serve garnished with cilantro
