Pasta
Step 1
Cook the pasta according package instructions.
Step 2
Cut the lemon into slices and chop the garlic with a knife. Grate off some of the lemon zest without removing the white part.
Salmon
Step 3
Heat the olive oil in a frying pan and set the heat to medium-high. Place the salmon skin side down in the pan and season with salt and pepper. Fry for 2 minutes.
Step 4
Turn the salmon and add the butter, garlic, thyme and lemon. Season again with salt and pepper. Keep pouring the melted butter over the salmon. Fry for 2 minutes. Then remove the salmon, garlic, thyme and lemon slices from the pan.
Lemon Sauce
Step 5
Put the butter in the same pan in which the salmon was fried. Set the heat to medium. Once the butter has melted, add the lemon, garlic and thyme to the pan. Fry everything for approx. 2 mins.
Step 6
Now pour in the white wine and simmer for approx. 3 mins. until reduced.
Step 7
Now add the crème fraîche and simmer again for 3 minutes.
Step 8
Add the lemon zest and spinach to the sauce. Allow the spinach to shrink completely.
Step 9
Then add 2 tablespoons of the pasta water.
Step 10
Season with salt, pepper and chili.
Step 11
Add the salmon and carefully cut into smaller pieces with a wooden spoon.
Step 12
Finally, add the pasta and stir everything well. Then enjoy!
