Instructions
Step 1
Grate the zucchini with the skin and squeeze out any water from them. Add to a bowl.
Step 2
To the bowl add all the other ingredients and mix well. Batter should be not to wet and sticky.
Step 3
Form into 6 patties and fry in oil for 3-4 minutes, 2 at a time. flipping when needed so they don’t burn.
Step 4
Place them on a paper towel to drain any excess oil.
Step 5
Serve warm. They refrigerate and freeze well to for the next day or future breakfast or snack.
