This is my favorite sandwich to use up leftover rotisserie / roast chicken and topped with creamy cucumber coleslaw and crunchy lettuce it’s a definite must try from me

Step 1
Grate the cucumber then squeeze out any moisture and add it to a bowl with Greek yogurt mayo mustard vinegar garlic dill salt and pepper to taste and mix together

Step 2
Add buns to a pan with and toast them

Assemble your sandwich - first add lettuce tomatoes then some
Cucumber coleslaw sliced rotisserie chicken breast salt and pepper to taste more cucumber coleslaw then put the tops on and serve .
