For the marinade
10chicken thighs
1 tspchilli powder
1 tsppaprika
1 tspgarlic powder
or 1 tbsp garlic paste
Herbs
salt
pepper
lemon juice
olive oil

Instructions
Step 1
1. First marinate 10 chicken thighs as you wish. I used chilli powder, garlic, paprika, marinade, lemon juice, salt, pepper and olive oil
Step 2
2. Add some olive oil to a pot and cook your chicken on each side.
Step 3
3. Set aside and in the same pot, cook chopped onion on a low heat until browned. Add garlic and mix well.

4. Add orzo and mix until coated. Pour in vegetable stock. Add salt, pepper and liberal amounts of lemon juice + any other seasonings of your choice.

5. Once the spinach has softened, add the chicken back to the pot and cover with the lid.
Step 6
6. Cook for 15 minutes until the water has evaporated and the orzo is cooked (I prefer it soft rather than al dente). Add more vegetable stock during cooking if necessary. Top with chopped parsley.
Step 7
7. I really recommend serving with chopped cucumber, extra lemon juice and chilli oil as this was my favourite way to eat it. Another option is serving with a quick side of: chopped cucumber, red onion and tomato mixed with lemon juice and 1/2 tsp salt.
