This is a sandwich recipe from my uncles deli. It was always sold out because it’s so tasty ! Chunky toasted ciabatta creamy pesto with fresh peppery rocket and mozzarella just Devine . Keep it vegetarian by adding vegetarian cold cuts .

Step 1
Slice ciabatta in half then drizzle olive oil in the bread and toast in a pan until golden . Spread the pesto between the two pieces of ciabatta

Add the rocket sliced mozzarella tomatoes and season with salt and pepper then add the basil drizzle with olive oil and add some deli ham/ turkey / chicken or vegetarian versions if you want to add some . Slice in half and enjoy fresh
