Easy and handmade Asian inspired chicken burger made with ground meat. Fairly healthy and can be eaten as a lettuce wrap to omit the bun if you’re looking for a lower carb sitting.

Instructions

Step 1
In a mixing bowl, combine ground Chicken, ground ginger, garlic powder, cilantro, green onions, sriracha, soy sauce, sesame oil, rice vinegar, egg, breadcrumbs, salt & pepper. Mix well until fully combined. Set aside in refrigerator.

In a small bowl, combine kewpie & wasabi paste and mix well. Set aside.

Step 3
Combine all sauce ingredients in a small sauce pot and bring to a low boil for 2 - 3 minutes. Be careful NOT to burn.
Step 4
In a frying pan, heat oil on medium high heat and lightly sauté kale on both sides to soften up the leaf. Remove from pan, pat dry on paper towel and reserve.

Step 5
Preheat your grill. It’s time! Set parchment on a baking sheet. Using a 6 inch cookie cutter, fill chicken mix in cookie cutter and lightly press burger mix. This will give it a little more width and slightly thinner for an efficient cooking time.
Step 6
Place pineapple rings on the grill for marking, flip over and brush BBQ sauce and let caramelize for 1 minute. Remove and reserve.
Step 7
Grill Chicken burgers on each side until fully cooked at internal temperature of 165F. Brush BBQ sauce on patty to finish. Build burger beginning with kewpie on both aides of the bun. Place kale at bottom followed by patty, grilled pineapple and shaved onion ring. Enjoy!
