Step 1
Preheat the oven to 350F (175C) and line an 25x25 cm baking pan with parchment paper or aluminum foil. Make sure the paper is overhanging so you can easily lift the brownies later

Place the butter in a light colored pot at medium heat until the butter reaches a darker brown color with brown solids at the bottom of the pan (be careful not to burn the butter)

Take off the heat and and the chocolate, cocoa powder, and instant coffee. Mix well till smooth and let cool (you can speed this process by placing the pot on an ice bath while whisking)

Place the eggs, white sugar, brown sugar, vanilla extract and salt in a large bowl and whisk vigorously until it doubles in size and it reaches a light color (almost white) You can use a whisk or mixer

Add the chocolate ganache to the mixture and fold until combined (do not whisk or the batter will loose air)

Sift together the flour and cocoa powder adding the chocolate chunks as well, combining everything by folding the batter until there’s no signs of flour

Pour the batter into the prepared baking pan and smoothie the surface

Bake in the preheated oven for 30-35 minutes. If you invert a toothpick it should come out with a few wet crumbs
