Instructions

Step 1
Preheat oven to 350 degrees. Fry bacon to preferred doneness. Remove from pan and dice.
Step 2
Season diced chicken to taste with lemon pepper.
Step 3
Fry diced chicken in left over bacon grease. Set aside.
Step 4
In medium sized bowl add eggs, cottage cheese, heavy cream, lemon pepper, salt, and paprika then blend with hand blender.
Step 5
Fold 1/2 cup cheese into egg mixture and set the other 1/4 cup aside.
Step 6
In 9" round pan lightly toss together the chicken, onion, spinach, and bell pepper. Next sprinkle the bacon evenly over the mixture.
Step 7
Pour egg mixture evenly over top then sprinkle remaining cheese evenly over the top of that.
