This is my grannies recipe that she passed down. She discovered it when she was visiting Germany many years ago I renamed it 101 chicken to my children as my granny lived to 101 years !

Step 1
Firstly Chop the onion, as you do go on heating up the oil in the pan then add the onion on a low heat. You just want to soften the onion not to brown it so about Four minutes, then you want to add the curry powder for around two minutes to stir it in with the onion. Then it’s time to add the wine, sugar, salt and pepper the Bayleaf and the lemon on a high heat for around 10 minutes to let it simmer, Just so it gets to a thicker consistency, then drain and cool. Now I usually use this time to see to the chicken to cool it down and to shred it for preparation. In a separate bowl you now have your apricot jam to add to a fresh pan. You want to heat this just for about 2 to 3 minutes then add to a new bowl where you add your mayonnaise & cream now usually you would need quite a large amount of mayonnaise, then add the sauce you’ve just made this give it a good mix and then add your chicken and pop it in the fridge to cool. this recipe turns out different every time you make it! This is usually a lovely meal to have with jacket potatoes.
