Chicken Caesar Pasta Salad

This Chicken Caesar Pasta Salad is an easy and delicious lunch (or dinner) that comes together in no time. Pan fried chicken, bite size rigatoni, crisp romaine lettuce and Parmesan cheese shavings, all tossed in a delicious homemade Caesar dressing.

Instructions

Step 1
1. Cut the chicken breasts in half horizontally into two even pieces. Combine all the seasonings together in a small bowl. Season both sides of the chicken with the spice mixture.

2. Heat a pan on medium- high heat. Add oil, fry the chicken for about 5 minutes per side or until it's golden and cooked through. Remove the chicken to a plate and let rest and cool before cutting into bite size pieces.

3. Bring a pot of water to a boil, add in a generous amount of salt, add in the pasta and cook it al dente according to package directions. Once it's done, drain it and rinse it with cold water. Let it sit in a colander while you prepare the lettuce and dressing.

4. In a bowl combine all the ingredients for the dressing. The mayonnaise, Dijon mustard, Worcestershire sauce ( you can also use soy sauce as a substitute) garlic, lemon juice, EVOO, salt, pepper and grated Parmesan cheese, and mix well. Cut the lettuce into bite size pieces, wash and dry.

5. Assemble the salad- In a large bowl add in the cooked pasta, chicken, lettuce, Parmesan cheese shavings, pour the dressing on top and toss everything together really well. Garnish with croutons and more Parmesan cheese and enjoy!
