Instructions
Step 1
Heat wok or saute pan over medium-high heat. Add oil and peppercorns. Stir until the peppercorns become fragrant and dark, about 1 minute. Remove peppercorns and discard.
Step 2
Add garlic, chile peppers, and ginger. Cook stirring continuously for 1 minute.
Step 3
Raise the heat to high, add cabbage, and cook, stirring continuously, until it begins to wilt, 3-5 minutes.
Step 4
Add soy sauce, vinegar, sesame oil, and sugar and stir to incorporate. Add the scallions and cook until the cabbage is beginning to brown in spots, 2-3 minutes.
Step 5
Season lightly with salt and serve hot.
