Instructions

Tofu Bacon

Step 1
Combine all ingredients together in a bowl and whisk well.
Step 2
Marinate tofu slices in marinade for 24hrs
Step 3
Preheat oven to 425
Step 4
Line baking dish with parchment and layer slices slightly apart. Reserve the liquid to brush on tofu halfway through cooking.
Step 5
Bake for 25-30 minutes, flipping halfway through. Tofu should look much darker when it is done and may crispen up after baking.

Monte Cristo

Step 6
Combine milk, chickpea flour, nutritional yeast, maple syrup, and salt in a wide shallow dish. Place two slices of bread into the batter and allow the slices to sit in the batter for 1-2 minutes. Slices should be well coated but not overly soggy.

Meanwhile, in a large nonstick skillet over medium heat with 1 tbsp of butter.
Step 8
Place two battered slices in the pan and cook on one side for approximately 3 minutes. Flip and put dijon mustard on 1 slice and mayo on the other. Use 3 slices of cheese per sandwich and divide between the bread. Top one slice with tofu slices and assemble the sandwich together. Continue to cook 3-5 minutes on low heat covered until cheese has melted.
Step 9
Repeat with remaining sandwiches.
Step 10
Top with powdered sugar and serve with maple syrup or raspberry jam.
