Instructions

Step 1
In a sauce pan sauté first 7 ingredients (only use white part of baby onions) until fragrant.
Step 2
Add ground meat and break it down to small pieces. Then season with sesame oil, tomato paste, and some extra salt as needed. Cook for 10 min until no longer pink.
Step 3
Meanwhile combine all stir fry ingredients in a bowl and put on low heat and let simmer for 5-6 min to help thicken it.
Step 4
Add the eggplant chunks and mix in the sauce. Cook until eggplant is soft but not mushy. By these point the sauce will have glazed the eggplant 6-9 min.
Step 5
Add eggplant to meat and mix together. Then sprinkle the rest of the baby onion (green part) on top.
