Instructions
Step 1
1. Preheat the oven to 180°C (350°F).
Step 2
2. Separate the eggs, placing the yolks in one bowl and the whites in another. Add a pinch of salt to the whites and whisk until stiff peaks form.
Step 3
3. Mix the yolks with spinach powder. If using fresh spinach, blend the egg yolks with 100g fresh wilted and drained spinach in a food processor until smooth.
Step 4
4. Gently fold the yolk mixture into the whites.
Step 5
5. Then add almond flour and mix until incorporated.
Step 6
6. Spread the mixture evenly onto a baking tray lined with parchment paper. Bake for 9-10 minutes, or until set. Let cool completely.
Step 7
7. Spread cream cheese over the cooled spinach roll and sprinkle with oregano.
Step 8
8. Finely chop arugula, shrimp, cherry tomatoes, cucumber, and avocado. Mix with lemon zest, lemon juice, salt, and pepper.
Step 9
9. Place the filling on the spinach roll, leaving about 2 inches on one side.
Step 10
10. Roll tightly from the filled side towards the empty side.
Step 11
11. Wrap the roll in cling film and chill in the fridge for at least an hour. Slice and serve. Enjoy!
