Brunch’s time is usually when the body is at optimal digestive power. So a heavy meal to count for lunch can be a yummy choice.
A mix of fiber, whole carbs, protein, good fat, greens and a type of ferments is what your body needs to flourish.
You can veganize the recipe by replacing the goat yogurt/labneh with vegan yogurt/labneh. And skip the egg.

Instructions
Step 1
Let’s start with the easy stuff. Toast your bread to a light crisp and allow it to cool down.

Mushroom:

Slice the mushroom, not too thin or you can end up with burnt mushroom.
Step 4
Roughly chop the green onions.
Step 5
Heat your pan on medium high, once it is hot add your oil and mushroom, no need to heat the oil. With mushroom, you don’t want to overcrowd them, or it will be a watery mess.
Step 6
Add the cumin and the black pepper, and the chopped green onion.
Step 7
Once mushrooms are golden you can add the salt and the juice of one lime. Turn off the heat.
Step 8
Now time for the egg. For a soft boiled egg. Take the egg 10mins before cooking out of the fridge.
Step 9
Heat a a pot of salted water, just a tsp of salt would do. The salt will keep the shell intact to avoid breakage.
Step 10
Once the water starts to simmer, drop your egg and let it cook for 6 mins, if you want a jammy consistency cook for 7 to 8 minutes.

Take the egg out and drop it in a bowl of iced water for a couple of minutes.

Crack the egg all over and peel.

To assemble, the toasted bread, spread the yogurt or labneh. Add droplets of the kimchi juice or fermented chili. Or go for kimchi.

Add the mushroom and spring onions.

And then add the egg on top.

Ground black pepper on top and a sprinkle of Palestinian sumac.
