Instructions
Step 1
Mix flour and salt together in the bowl of your stand mixer

Add yeast, honey and sourdough to the water, wait 5 minutes until the yeast foams on top

Add the wet ingredients to dry ingredients and mix for 5 minutes on high in your stand mixer

Once a smooth dough ball forms, add oil to the sides of the bowl and make sure the dough is coated evenly.

Cover the bowl and rest for 1.5 hours. Fold every 30 minutes.

Now form the dough and let it rest for another 30 minutes in your bread rising form (coated with flour)

During this last rest, place a dutch oven or iron cast pot in the oven and preheat to 485° fahrenheit.

Once the oven is preheated move the dough into the dutch oven on top of parchment paper and give it some slashes across the top with your baking razor blade.
Step 9
Place the lid on the pot and bake at 485° fahrenheit for 5 minutes.
Step 10
Lower temperature to 395° ahrenheit or another 40 minutes. 10 minutes before end of baking remove the lid and let the bread get cross.
Step 11
Cool the bread before cutting.
