Notes Once fully assembled, it’s best to enjoy the boba tea immediately for the best flavor and texture. However, you can store some of the elements separately SHELF LIFE: 1-4 days (varies) Optional add-ins and variations Other tea: You could substitute black tea for green tea, jasmine tea, or oolong tea. Without tea: Bubble tea doesn’t necessarily have to have tea in it. Simply omit the tea entirely and just use milk with the brown sugar syrup and tapioca balls. Without milk: You can enjoy this bubble tea without milk for a more robust flavor. Sweetener: Instead of the brown sugar syrup, use another sweetener like white sugar, honey, agave, date syrup, etc. You could even use condensed milk (reducing the amount of milk and sugar). Coffee jelly OR Coconut jelly: This would make for a delicious extra topping. The boba will only stay fresh for up to 4 hours. However, you can store some of the elements separately. The black tea: You can brew it 2-3 days in advance and store it in the fridge. The milk tea (black tea and milk) can also be stored in an airtight container in the fridge for up to 3 days. Tapioca pearls: If you cook too many tapioca balls, you can store them in the sugar syrup in the fridge for a few days. Reheat them with the syrup in a saucepan. Brown sugar syrup: Prepare it in advance and store it in the refrigerator for 3-4 weeks.

Instructions

MAKE THE TEA

Step 1
Use a kettle or heat water on the stovetop. Bring the water to just under a boil.
Step 2
Add the black tea into a teapot or a large mug and pour the water over it. Leave it to steep for 5 minutes (up to 10 minutes if you like a stronger tea).

COOK THE BOBA

Step 3
Prepare home made or store-bought boba. Stir them occasionally to avoid sticking.
Step 4
Once cooked, drain and immediately transfer to a bowl of cold water or leave under running cold water, or add them directly to the brown sugar syrup.

MAKE THE BROWN SUGAR SYRUP

Step 5
Add the water and brown sugar to a small saucepan and heat over medium heat. Stir occasionally until the brown sugar has completely dissolved and is simmering.

Cook for a further 3-4 minutes to slightly thicken up.
Step 7
Transfer the cooked tapioca balls to the syrup and mix well to coat them in the melted sugar.

ASSEMBLE THE BUBBLE TEA

Add the brown sugar boba mixture to a tall glass (like a latte glass) and adjust the amount to your personal preference. Add ice if desired. Pour the tea over the top, then add your milk of choice. The ratio tea to milk is around 4:1. Stir well and enjoy! To get the tiger streak effect, after placing the syrup in the cup, swirl it around so it coats the sides in syrup. Then add the milk.
