Base

Base
Step 1
Crush digestive biscuits in a food processor until fine crumbs are formed.
Step 2
Melt butter and add it to the crushed biscuits. Mix well until fully combined.

Press the biscuit mixture onto the bottom of a 21cm square baking tin lined with parchment paper.

Bake the base in a preheated oven at 180°C for 8 minutes until slightly set. Remove from the oven and set aside.
Crumble Topping
Step 5
In a bowl, combine self raising flour, ground almonds, caster sugar, salt, and unsalted butter.

Mix the ingredients until pea-sized crumbs form. Refrigerate the crumble mixture to chill while preparing the cheesecake filling.
Cheesecake filling
Step 7
In a mixing bowl, combine cream cheese and sour cream. Mix until smooth.

Add brown sugar and mix, add eggs and continue to mix, pour double cream, self raising flour, and lemon juice to the cream cheese mixture.

Mix the ingredients until just combined, being careful not to overmix the batter.
Baking

Preheat the oven to 190°C.

Sieve the cheesecake filling for a smooth texture and pour it over the pre-baked biscuit base in the tin.

Bake the cheesecake in the preheated oven at 190°C for 12 minutes until slightly set.

Remove the partially baked cheesecake from the oven and sprinkle frozen blueberries and the chilled crumble mixture on top.

Return the cheesecake to the oven and bake at 180°C for an additional 35 minutes until the top is golden brown and the filling is set.

Turn off the oven and leave the cheesecake inside with the door slightly open for 2-3 hours to cool gradually.

Once cooled to room temperature, refrigerate the cheesecake for 5-6 hours or overnight to set completely.
