Spiral Cucumber Salad

This cucumber salad is not only fun but also tasty. It was a bit of a hit on TikTok although the recipe for the sauce there is more Korean. I adapted it to make this more of a Chinese cucumber salad. I made one batch for a dinner and it disappeared and then every time I have made it since it has been so popular that it disappears. It's perfect as a side for not only Chinese dishes but also grilled chicken, beef and lamb. (Notquitenigella.com)

Firstly cut the cucumbers spiral style. Take each baby cucumber and cut through almost to the base on a diagonal. What helps is having chopsticks on each side to prevent it cutting through. Then flip the cucumber over and then cut vertically. The cucumber should now be able to be pulled in and out like an accordion.
Step 4
Sprinkle salt flakes over the cucumbers and let sit for 30-60 minutes. Meanwhile mix the garlic, ginger, vinegar, sugar, chilli oil, sesame oil, sesame seeds and chilli together. Drain the extra water from salting the cucumber and pour over the chilli mixture and mix.
