Instructions
Step 1
Heat 0.5 tbsp oil in a large wok over a high heat. Add lamb once hot and fry for 8-10mins until really crisp and browned.
Step 2
Stir the cumin, soy, rice wine and honey into the mince until well combined, then use a slotted spoon to transfer to a bowl. Return the pan to a med- high heat and add remaining 1tbsp oil. Add the aubergine to the pan and fry for 6 minutes, stirring regularly, until golden and tender, then turn heat down and add chillies, ginger and salad onion whites; cook for a further 2 mins.
Step 3
Add the noodles to the pan with 2tbps water and toss through for 2 mins. Add the lamb and stir well until combined and piping hot (2mins). Divide between bowls and scatter with salad onion greens and finely sliced chilli.
