Instructions

Step 1
Important note before you begin. Determine whether you will be using a short rise (a few hours) or longer cold rise (1-2 days in fridge). This will determine the amount of yeast you should add.
Step 2
In your measuring cup, measure out the warm water. Add the sugar and yeast (reminder to add the amount of yeast based on your rising time preference), 1 tsp yeast for longer 1-2 days cold rise, 2 1/4 tsp yeast for shorter rise. Wait 10 minutes to make sure the yeast is alive and foaming at the top.
Step 3
Add your salt, olive oil and bread flour to a large bowl or mixing bowl. Stir together.
Step 4
Add your yeast/water mixture. Stir together to form a dough. Knead on a floured surface for 10 minutes, OR put your dough hook on your mixer and let the mixer do the work for you. Once done, split it into two dough balls and place them in an bowl that has been sprayed with cooking spray or wiped down with olive oil. Cover bowl with plastic wrap.
Step 5
Cut dough into equal size dough balls. Place in pre-oiled bowl and cover with lid. For a shorter rise time, allow to rise 75 minutes in a warm place. For a longer rise time, store in the fridge for 1-2 days.
Step 6
Preheat oven with a pizza stone to 500 degrees for at least half an hour to allow your oven and pizza stone to heat up.
Step 7
Roll out each dough ball into a roughly 12 inch circle. Add toppings. Bake 7-10 minutes.
