Ingredients
3 servings
6 ozvermicelli rice noodles
2 tbspsolive oil
1 lbchicken breast
cut in bite size pieces
1onion
diced
½ cupred pepper
diced
1stalk celery
diced
4 tspsminced garlic
2 tbspssoya sauce
1 cupchicken broth
2 cupscabbage
shredded, or bagged coleslaw mix
½ cupcarrots
thinly sliced
3green onions
sliced
salt
to taste
pepper
to taste
red pepper flakes
2 tspscornstarch
2 tspswater
cold
Instructions
Step 1
Prep the noodles as directed on package. Mine were 6 minutes in hot water. Drain and set aside.
Step 2
Heat oil to medium high in a wok. Add chicken and brown, then add onion, garlic, soya sauce, salt and pepper stirring for 5 minutes.
Step 3
Add the broth, cabbage, carrots red pepper, celery and green onions for 5 minutes along with the red pepper flakes. Mix the cornstarch and water together and stir in heating until slightly thickened, about 1 minute.
Step 4
Finally toss in the noodles and mix together
