Instructions

Step 1
In a medium bowl, mix together the lime zest, 1/4 cup of the lime juice, the chili powder, paprika, and cumin. Add the shrimp, toss, and marinate at room temperature for 20 minutes.
Step 2
Preheat a grill to medium heat
Step 3
Thread the shrimp onto the skewers. Grill until the shrimp turns pink, 4 to 5 minutes per side. Remove the shrimp from the skewers and set aside in a bowl
Step 4
In a separate bowl, make the dressing by combining the remaining 1/4 cup lime juice, the olive oil, cilantro, salt, and pepper
Step 5
In a large serving bowl, toss together the mixed greens, avocado, tomato, and onion. Top with the grilled shrimp and drizzle with the dressing
