Step 1
In a large skillet over medium high heat, heat oil until hot. Add chicken and garlic and cook 4-5 minutes, or until the chicken begins to turn golden, stirring occasionally.
Step 2
Add ketchup, honey, vinegar, pineapple juice, pineapple chunks, red pepper. Stirring until well combined. Reduce heat to medium-low and simmer, stirring occasionally.
Step 3
Meanwhile, in a small bowl, combine soy sauce and cornstarch; whisk until well mixed.
Step 4
When the sauce begins to boil, slowly stir in the soy sauce mixture; cook for 2-3 minutes, or until chicken is cooked through and the sauce is thickened. Serve with rice.
