Beef 'n' Bean Enchilada Bake

Instructions

Step 1
Preheat oven 350. Coat baking dish with cooking spray.
Step 2
Place 2 tbsp enchilada sauce aside.
Step 3
In a medium bowl, combine the remaining enchilada sauce and mushroom soup. Evenly spread 1 cup on the bottom of the baking dish.
Step 4
In medium bowl, combine the remaining enchilada sauce and mushroom soup. Evenly spread 1 cup on bottom of baking dish.
Step 5
In a skillet over medium heat, saute beef until no longer pink. Add rice, beef dip, and the 2 tbsp enchilada sauce, and mix well.
Step 6
Spoon an equal amount of mixture on center of each tortilla and roll up. Place seam side down in baking dish.
Step 7
Pour remaining sauce over tortillas and cover.
Step 8
Bake 35 minutes, remove from oven and sprinkle cheese evenly over top. Bake additional 5-10 minutes or until cheese is melted.
